For Yasmina and Cornelio, specialty coffee became a way to reshape their future. In 2019, inspired by neighboring farmers succeeding with Geisha, they founded Alto Capasi high in the mountains of Cusco at an astonishing 2324 masl. While Cornelio grew up around coffee, it was together with Yasmina that they decided to move beyond conventional farming and focus entirely on quality driven specialty coffee. Since their first harvest in 2022, they have continued refining their processing and expanding their farm with Panamanian lineage Geisha, believing that exceptional coffee can create long term opportunities for both their family and community.

Harvesting is done through Ayni, an ancestral Andean tradition where neighboring families work together during harvest season. After meticulous hand sorting, cherries undergo a 72 hour in cherry resting phase that enhances sweetness and complexity through controlled oxidation. Following depulping, the coffee ferments anaerobically in GrainPro bags for another 72 hours before being washed and dried slowly under the sun. The result is a refined and expressive cup with remarkable structure, clarity, and depth.

This coffee peaks between 15 and 20 days. For the best experience, we recommend freezing it within this window if you want to enjoy it over a longer period.
