This Semendo lot reflects that dedication. Grown in fertile highland soil at 1400 meters, the cherries undergo an extended 166 hour anaerobic fermentation in hermetically sealed bags before being washed and dried with precision. The result is bold yet refined, layered with cherry jam sweetness, deep rum raisin character, and a lifted dried orange finish that gives the cup structure and clarity.
