Surrounded by the rolling mountains of Huila, his farm benefits from an ideal combination of altitude, climate, and fertile soils that create the foundation for complex and expressive coffees.

This Yellow Pacamara lot showcases both the uniqueness of the variety and Gerson's attention to detail. Known for its large bean size and layered cup profile, Yellow Pacamara offers a beautiful balance of sweetness, florality, and structure. Through a carefully controlled yeast inoculated anaerobic fermentation, flavor development is guided with precision before the coffee is dried as a natural. The result is a cup that opens with delicate elderflower aromatics, moves into rich rhubarb compote sweetness, and finishes with a smooth milk chocolate character that brings everything together beautifully.
