Don Alexis Coffee is run by the Ramirez Navarro family, whose history in agriculture spans generations. The legacy of Mr. Alexis Ramirez lives strongly on the farm, shaping a philosophy built on care for the land, quality, and constant improvement. In 2015 the family established their own micro mill, Los Campos, giving them full control over processing and the freedom to pursue direct trade and innovative techniques.
For this natural Catuai lot, the cherries are selectively picked and placed inside a solar dryer where temperatures between 40 and 45 degrees begin breaking down natural sugars, gently caramelizing the fruit. They are then sun dried for around 30 days and rested in parchment until export. The result is a sweet, fruity, and slightly funky profile with a smooth balance that reflects the family’s dedication to thoughtful, detail driven coffee production.
