Don Alexis Coffee is owned and operated by the Ramirez-Navarro family, whose farming roots go back generations. The story begins with Mr. Alexis Ramirez, a lifelong farmer whose passion for the land continues to inspire his family today. Even after his passing, his vision guides the farm’s dedication to quality, innovation, and sustainability.
In 2015, the family built their own micro-mill, Los Campos, allowing them to process coffee themselves and ensure full control over quality and traceability. This bold step opened the door to direct trade partnerships and greater experimentation in processing methods.
This natural Sarchimor Hybrid lot shows exactly what makes Los Campos special. After selective picking, the cherries are fermented inside a solar dryer where temperatures of 40–45°C start to break down natural sugars, partially caramelizing the fruit. They are then sun dried for about 30 days and stored in parchment until export. The result is a funky, sweet, and fruity coffee with a round, balanced cup. Expect tropical pineapple, the tangy brightness of tamarind, and the rich depth of cocoa nibs.
