SL-28 was originally developed in the 1930s by Scott Agricultural Laboratories and has since become one of the most celebrated coffee varieties for its complexity and cup clarity. At Quebradita Farm in Oporapa, Edinson Argote gives this classic variety a contemporary twist. His version, dubbed "Advanced Natural," is the result of meticulous small-batch processing working with just 80 to 100 kg of cherries at a time.

Each batch undergoes a double fermentation, beginning with 72 hours of controlled anaerobic fermentation. Once partially dried to 20% humidity, the coffee is rehydrated with a special yeast culture for four days, enhancing clarity, sweetness, and structure. The drying process then continues over 76 hours at an average of 40°C, preserving the vibrancy and balance of the final profile.

The result is a wildly expressive SL-28 bursting with layered fruit and florals. Think cherry liquor, ripe passion fruit, and delicate violet an unforgettable expression of variety, terroir, and craft.
