Diego Horta grew up surrounded by coffee on his family’s farm, learning the craft from his parents, whose dedication inspired him to improve both the quality and value of their coffee. Over the years, his curiosity led him to experiment with different varieties such as Geisha, Sidra, Pacamara, and Borbón Rosado, as well as innovative processing techniques including anaerobic and natural methods.
His commitment to sustainability runs deep. Alongside coffee, Diego cultivates plantains, yucca, avocados, and bananas to maintain soil health and create a balanced ecosystem. With the help of his family, he continues to build a farm that blends tradition and innovation, rooted in care for the land and community.
For this Pink Bourbon lot, the cherries undergo a 12-hour oxidation before being depulped and fermented in bags for 30 hours. The coffee is then dried in a shaded shed for 15 days until it reaches 10.3 percent humidity. The result is a clean, bright, and elegant cup that celebrates both Diego’s precision and his family’s generational passion for coffee.
