Finca Las Flores is a name that has become synonymous with innovation in Colombian coffee. What began as a family dream in 1990 has evolved into one of the most exciting farms in Huila, led today by Jhoan Vergara and his family. Raised among coffee trees, Jhoan developed a deep curiosity for every stage of coffee production, eventually studying advanced agricultural practices and coffee processing before returning home to push the boundaries of what coffee could be.
This lot undergoes an intricate fermentation process, beginning with 36 hours of anaerobic fermentation, followed by 12 hours of oxidation and an additional 36 hours of anaerobic fermentation after depulping. After fermentation, the coffee is decaffeinated using sugarcane and finished with a 30 minute thermal shock at 50°C. The result is a decaf that retains the complexity, sweetness, and character that have made Finca Las Flores famous around the world.
Today, Jhoan continues to innovate alongside his family, combining generations of farming knowledge with modern processing techniques. Every cup reflects the passion, dedication, and relentless pursuit of quality that has defined Finca Las Flores for more than three decades.
