Papayo is one of the rarest and most captivating varieties found in southern Huila. Its name comes from the papaya-like shape of its cherries, but its flavor is what truly sets it apart. Luis Marcelino, the visionary behind Aroma Nativo, works closely with small farmers and his fermentation lab to push the limits of flavor expression while maintaining balance and clarity in the cup.

This lot underwent a meticulous experimental fermentation process designed to enhance the tropical and floral qualities that Papayo is known for. Luis uses a combination of controlled temperature, selective microbial inoculation, and extended drying techniques to build complexity while preserving elegance.

We used this Papayo in our World Barista Championship routine in Milan a coffee that represented imagination, innovation. In the cup, it delivers incredible tropical intensity, refined structure, and a sense of clarity that captures why Aroma Nativo continues to be one of the most inspiring projects in Colombian coffee today.
