Alexander Vargas began his coffee journey at just 15 years old, following in the footsteps of his parents. By the age of 20, he had fully committed himself to specialty coffee, spending more than two decades refining his craft and experimenting with advanced processing techniques and rare varieties. At La Piragua farm, Alexander has become known for producing highly expressive coffees through meticulous anaerobic processing, earning multiple national Cup of Excellence nominations along the way.
Driven by both curiosity and precision, Alexander built his own coffee laboratory on the farm to cup and classify every lot himself. Beyond coffee, he also grows dragon fruit to maintain year round sustainability and productivity. His philosophy blends respect for tradition with constant innovation, while also mentoring younger producers in his community to help strengthen the future of Colombian specialty coffee.
For this lot, cherries undergo a 60 hour anaerobic fermentation in airtight barrels before being slowly dried in covered drying sheds for 18 days until reaching 10 percent moisture. The result is a clean yet expressive natural with layered fruit, sweetness, and depth.
This coffee peaks between 15 and 20 days. For the best experience, we recommend freezing it within this window if you want to enjoy it over a longer period.
