The Don Benjie Estate, located in the lush Bajo Mono canyon near Boquete, Panama, benefits from volcanic soil, clear spring water, and the cooling influence of the Bajareque mist. Founded by coffee enthusiasts Benjamin de Dianous and Stefan Müller, the estate focuses on sustainable practices and the pursuit of exceptional coffee quality.

Upon arrival, the coffee cherries were floated to ensure only the best made the cut. The cherries then underwent Carbonic Maceration (CM-16) for 4 days, a fermentation technique that enhances flavor complexity. After this, the cherries were rinsed with fresh spring water to remove any residual fermentation byproducts. Finally, they were sun-dried for 4 weeks on African raised beds (Bastidores), a method that allows for optimal airflow, preserving the beans' vibrant and delicate notes
