The Story:
Los Campos, a farm owned by the Ramirez-Navarro family, was founded by Alexis Ramirez, a farmer whose life has been dedicated to agriculture. In 2015, the family faced a challenge and took a bold step by constructing their own micro-mill, "Los Campos." This allowed them to process the coffee themselves, focusing on quality and traceability of their micro-lots and eliminating their dependence on cooperatives. The dream of working directly with roasters via direct trade has always been a guiding vision for the family.
The farm is located in the Los Santos region, specifically Tablón del Guarco in Cartago, an area known for its high altitudes and premium-quality coffee. The Catuai cherries are carefully fermented inside a greenhouse or solar dryer, where the fermentation occurs at a constant temperature of 40–45°C, aided by resilient microbes. The heat breaks down the natural sugars in the cherries, partially caramelizing them before the cherries are sun-dried for around 30 days. The coffee is then stored in parchment until it's ready for export. This innovative fermentation and drying method results in a coffee with a unique and funky, sweet flavor profile, offering a rounded and balanced cup.
