Aji Bourbon is a mutation of an Ethiopian Landrace, in the region it is known as Ají Borbón since the mucilage has a slight smell and flavour similar to red pepper.
The Lasso brothers have been shaking up the specialty coffee industry for a couple years now. Baristas have been making it to the finals of both World Barista and Brewers cup Championships with their coffees. They are well skilled artists with some new perspectives.
This coffee went through a detailed process, oxidation, quenching and precision drying. What came out on the other side is an amazing coffee with bright flavours.
