This coffee is a perfect example of experiencing terroir in the cup. The clean and yet vibrant flavours hit us right in the feels when on the cupping table.
This is our very first time working with La Palma y El Tucan from Colombia and I can tell you this, it won't be the last. With this washed Gesha they aim to highlight the genetics and terroir, resulting in a development of delicate fruity notes with typical citrus-malic acidity, complemented by a clean and clear aftertaste. They also have a pH Clarity Project that they implemented on this specific lot that aims to drive innovation in specialty coffee production by focusing on pH control during the fermentation process. pH is a critical factor that influences microbial activity and enzymatic reactions during fermentation, which ultimately impacts the flavor development and quality of the coffee.
This cup includes flavor notes of lemon candy, honeysuckle and a delicate texture that reminds us of champagne.
