Through our work with Dorman's auction program, we are able to access exceptional estate lots that highlight the diversity and potential of Kenyan coffee.\u003c\/p\u003e\n\u003cp\u003eFor this washed lot, only ripe cherries are selectively hand harvested before being depulped and transferred to open fermentation tanks. The coffee undergoes 24 hours of dry fermentation, allowing the remaining mucilage to break down naturally before being thoroughly washed. The parchment is then submerged in clean water for an additional 24 hours, a traditional Kenyan step that enhances clarity and cup structure.
