The Stripped Bourbon variety is one of Inmaculada’s latest showcases. Grown in the high-altitude slopes of Pichindé, in Colombia’s Valle del Cauca region, this coffee is part of their ongoing mission to push the boundaries of processing and variety expression. The Fellow Farms initiative gives Inmaculada the space to experiment, collaborate, and grow beyond their core estate all while maintaining their signature.
Inmaculada has long stood for quality and innovation, and working with them is always a pleasure. This lot is no exception bright, juicy, and beautifully layered.
The Process
This Stripped Bourbon was processed using a carefully managed natural method, with hand-picked cherries dried slowly on raised African beds. The result is a cup bursting with character—crisp white grapefruit acidity, the warm sweetness of panela, and a refreshing lemonade-like finish.
